Sweet Potato Pie

  • 4 1/2 cup sweet potatoes
  • 2 cup sugar
  • 1 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1 tall can evaporated milk
  • 1/2 tsp salt
  • 1/2 cup butter, softened
  • 4 eggs

Peel, cook and mash potatoes until creamy. Stir in butter, sugar and eggs, one at a time. Add nutmeg, cinnamon, salt and milk. Pour into  unbaked pie shells. Bake 20 minutes at 350°, reduce to 325° and bake 30 to 45 minutes longer, or until a knife inserted in the middle comes out clean.

This makes 3 (8 1/2 to 9 inch) pies.
