My Grandma made the best Sweet Potato Pie that you have ever eaten. I had misplaced the recipe until last night. I knew how she made it but wasn’t sure about all the ingredients and amounts. The only thing I was sure of was “make it like mashed potatoes”.
- 2 Sweet Potatoes or 1 large can of Sweet Potatoes
- 1 cup sugar
- 1 egg
- 1 tsp cinnamon
- lots of butter
Boil the potatoes, drain the water and put in a mixing bowl. Add the other ingredients while mixing. Use amount of milk to make the mixture the consistency of fluffy mashed potatoes.
Add the mixture to a unbaked pie crust. Cook slow at 350º until the toothpick comes out clean, about 1 hour.
