Southern Corney Creek Hush Puppies

  • 2 cups corn meal
  • 2 Tbsp all-purpose flour
  • 1 tsp soda
  • 1 tsp baking powder
  • 2 tsp salt
  • 1 cup buttermilk
  • 1 egg, slightly beaten
  • 2 Tbsp finely chopped onion
  • 1 Tbsp sugar

Combine dry ingredients; add buttermilk, egg and onion, stirring well. Carefully drop batter by tablespoonfuls into deep hot oil. Cook only a few at a time, turning once. Fry until Hush Puppies are golden brown (3 to 5) minutes. Drain well on absorbent towels.

Yield: 2 1/2 dozen.
