Watermelon Rind Preserves

  • 2 quart watermelon rind
  • 1 oz ginger
  • 1 gallon water
  • 5 1/2 cup sugar
  • 4 1/2 quart water
  • 2 lemons
  • 1/4 tsp salt
  • 2 Tbsp lime
  • 2 quart water

Remove all the rind on outer side (green) and red melon inside, leaving only white rind. Cut in 1 – inch squares.

Make a solution of lime and 2 quarts water. Cover rind with this solution and soak for 4 hours. Pour off lime solution. Cover with clear water and let stand for 2 hours. Drain, then boil for 45 minutes in ginger in 1 gallon of water.

Drain and drop into boiling syrup, made with sugar, 4 1/2 quarts water and juice of 1 lemon and salt. Slice other lemon and add 30 minutes later. Cook until rind is clear and transparent and syrup is like honey.

When cool pack in jars; seal and process for 30 minutes.

Green and red coloring may be added.
