- 1 package (1 lb) elbow macaroni
- 1 jar (9 /12 oz) sweet pepper relish
- 1 can (4 oz) pimentos, drained and chopped
- 1/2 cup diced green pepper
- 1 Tbsp chopped parsley
- 2 tsp grated onion
- 1 1/2 tsp salt
- 1 1/2 cup mayonnaise
- 1 1/2 cup dairy sour cream
- 1 1/2 cup milk
Cook macaroni as package label directs. Drain and rinse with cold water. In large bowl, combine relish, pimento, green pepper, parsley, onion, salt, 1 cup mayonnaise, the sour cream and 1/4 cup milk; blend well. Add macaroni; toss lightly until well combined. Refrigerate, covered, until well chilled, several hours or overnight. To serve – combine remaining mayonnaise and milk; stir into salad. Turn into salad bowl; garnish with salad greens.
