Green Rice

  • 4 cups cooked rice
  • 2 eggs beaten
  • 1 small can evaporated milk
  • 1 onion or 1 cup chopped green onion
  • Salt and Pepper to taste
  • 3 cups grated cheese
  • 2/3 cup oil
  • 2 cans cream of mushroom soup
  • 2 cups parsley or 1/2 cup dried

Mix grated cheese with warm rice. Mix eggs and oil, and add other ingredients. Pour into buttered baking dish and bake at 350° for 40 minutes.
