Seafood Supreme

  • 1 medium onion, diced
  • 2/3 cup Bell Pepper, diced crushed garlic
  • 4 slices white bread
  • 1 tsp. black pepper
  • 1 1/2 tsp. salt
  • 1 to 2 cups cooked shrimp
  • 1 cup diced celery
  • 1/4 cup pimento, chopped
  • 1/2 cup oleo
  • 1/2 cup water
  • 1 can mushroom soup
  • 1 can crab meat (optional)
  • 2 cup cooked rice

Saute in oleo – onlon, Bell pepper, garlic, celery and pimento. Add this to bread, moistened in 1/2 cup water. Add pepper, soup, salt, crab meat and shrimp. Add rice, stir carefully. Pour into greased casserole and top with 2 moist bread slices which have been seared in about 2 tablespoons oleo, or crushed cracker crumbs.

Bake uncovered for 20 minutes at 350°.
