Yellow Rice

  • 1 hen, cooked & cut off bone
  • 2 cup rice
  • 2 tsp turmeric
  • 1 can whole tomatoes, cup up
  • 1 can English peas
  • 1 cup cooking oil
  • 2 Bell peppers, chopped
  • 2 onions, chopped
  • 3 garlic buds, chopped
  • 1 small jar pimento

Cook 1 hen and pick off bone. Soak 2 cups rice in 6 cups broth and add turmeric and let set overnight. Sauté oil, Bell peppers, onions, and garlic. Place chicken on bottom, add tomatoes, add onion mix, add broth mix and bake in 350° oven 1 1/2 hours. Add 1 can English peas, drained and 1 small jar pimento.

Heat and serve.
