Banana Bread

  • 1 cup sugar
  • 2 eggs
  • 1 tsp soda
  • 1 tsp vanilla
  • 1/2 cup butter
  • 2 cup flour
  • 1 cup mashed ripe bananas (2-3)
  • 1/2 cup nuts (optional)

Cream butter and sugar. Add eggs. Mix well, then add mashed bananas and vanilla. Take some of the flour to flour nuts. Sift dry ingredients and add with nuts to mixture. Mix only enough to moisten dry ingrdients. Do not over mix. Pour into greased and floured pan.

Bake slowly in a 350° oven, 1 hour, for one large loaf. For baby loaves 35 – 40 minutes.
