Jam Cake

Mrs. Lacy Hear

  • 6 eggs, beaten separately
  • 2 1/2 cup jam
  • 4 cups flour
  • 1/2 tsp soda
  • 1 tsp allspice
  • 2 cup sugar
  • 1 cup butter
  • 1 cup buttermilk
  • 1 tsp nutmeg

Cream sugar and butter, add egg yolks, then add jam and buttermilk to which soda has been stirred in thoroughly, add flour and spices, fold in egg whites which has been beaten stiffly.

Bake in two or three layers.

Filling:
  • 1 egg, well beaten
  • 2 cup sugar
  • 1 tsp vanilla
  • 1 cup sweet milk
  • 3 Tbsp butter

Cook together until thick, cool then add nuts (1 cup nuts) and spread on cake.
