- 1 1/4 cup boiling water
- 1 cup oatmeal (quick or old fashioned, uncooked)
- 1/2 cup butter, softened
- 1 cup sugar
- 1 cup firmly packed brown sugar
- 1 tsp vanilla
- 2 eggs
- 1 1/2 cup sifted all-purpose flour
- 1 tsp soda
- 1/2 tsp salt
- 3/4 tsp cinnamon
- 1/4 tsp nutmeg
Pour boiling water over oats; cover and let stand 20 minutes. Beat butter until creamy; gradually add sugar and beat until fluff. Blend in vanilla and eggs. Add oat mixture and mix well. Sift together flour, soda salt, cinnamon and nutmeg. Add to creamed mixture. Mix well, pour batter into well greased and floured 9 inch square pan.
Bake in preheated over at 350° for 50 to 55 minutes, or until done.
Do not remove cake from pan.
Spread on frosting.
Frosting:
- 1/4 cup butter, softened
- 3 Tbsp half and half
- 3/4 cup flaked coconut
- 1/2 cup firmly packed brown sugar
- 1/3 cup chopped pecans
Combine all ingredients. Spread evenly over cake.
Broil until frosting becomes bubbly.
Service cake warm or cold.
