Marshmallow – Pecan Pie

  • 1/2 cup pecans
  • 2 egg whites, beaten stiff
  • 1/2 cup water
  • 1 cup sugar
  • 1 cup softened marshmallows
  • 1 Tbsp vanilla
  • 1 baked pie shell

Mix water and sugar; bring to a boil and cook until spins a thin thread; slowly pour hot syrup over beaten egg whites; add softened marshmallows, and beat until forms soft peaks; add vanilla and fold in pecans. Pour into baked pie shell and cook in preheated oven on 375° until lightly browned.

Pie shell will brown a little more, so do not have it too brown to start with.
