- 23 Ritz® crackers, crushed
- 1 cup sugar
- 1 cup chopped pecans
- 3 egg whites, stiffly beaten
- 2 tsp vanilla
Beat egg whites until stiff; add sugar, a few spoonful’s at a time; add other ingredients; pour into greased and floured pan, oblong Pyrex pan, and bake in preheated 350° oven.
Cool completely, top with whipped cream and add chopped pecans for garnish, if desired.
This makes 1 big pie or you can double recipe and cook in 9×15 inch pan.
