- 1 cup sugar
- 5 Tbsp flour
- 2 eggs, separated
- 1 cup milk
- 1 baked pie shell
- 1/2 tsp. vanilla
- 3/4 cup flaked coconut
- Dash of salt
- 3 Tbsp butter
Mix flour and sugar well. Add well beaten egg yolks. Mix. Add milk gradually and mix. Cook over low heat until thick. Add coconut, butter and vanilla. Cool. Beat egg whites, adding 3 tablespoons sugar as you beat. Beat until stiff and almost dry. Pour cooled filling in shell. Top with meringue and sprinkle coconut over meringue.
Bake in 325° oven until meringue is brown.
