Lime Pickle Sticks

  • 7 lb cucumber, peeled and cut into lengths
  • 2 cup lime
  • 2 gallon water

Soak cucumber stick in lime water 24 hours in glass or crock container. Rinse 3 times in clear cool water – careful not to break sticks.

Soak 3 hours in ice water. Remove from water; drain well.


  • 2 quart apple cider vinegar
  • 4 1/2 lb sugar
  • 1 Tbsp pure salt (not iodized)

Pour syrup over cumber. Let stand overnight. Add celery seed, mustard seed and spices to suit taste – small amount of turmeric.

Boil mixture 35 minutes. Put in jars and simmer.
