- 3 whole chicken breasts
- 2 tsp chicken soup
- 1 1/2 chicken soup
- 1/4 tsp garlic flakes
- 2 tsp lemon juice
- 1 1/2 cup diced celery
- 1/2 cup olives
- 1/4 cup chopped green onion
- 1 cucumber
- 1 can mandarin oranges
- Party salad dressing
- Fresh spinach
Skin, debone, and cut chicken into bite-size chunks. Stir-fry in mixture of il, chicken soup mix, poultry seasoning, and garlic flakes until chicken is opaque. Sprinkle chicken with lemon juice. Just before serving, toss chicken with celery, olives, onion, cucumber and oranges. Pour enough party salad dressing over chicken mixture to moisten; toss well.
Serve immediately on a bed of spinach lettuce.
Makes 6 servings.
