German Potato Salad

  • 6 – 8 medium potatoes
  • 1 medium onion
  • 1/2 cup vinegar
  • 4 strips bacon
  • 1/3 cup water
  • 1/2 tsp sugar
  • Salt and black pepper to taste

Boil potatoes. Peal and slice 1/4 inch thick. Chop onion. Cut bacon in small pieces. Fry bacon. Drain off all but 2 tablespoons grease. Add the vinegar, water and sugar. Bring to a boil. Stir to dissolve sugar. Remove from heat. When partially cool, mix dressing with potato slices. Add salt and pepper to taste and serve warm.
