Easy Garden Vegetable Pie

  • 2 cups chopped broccoli or cauliflower
  • 1/2 cup chopped onion
  • 1/2 chopped green pepper
  • 4 oz or 1 cup shredded Cheddar cheese
  • 1 1/2 cup milk
  • 3/4 cup Bisquick®
  • 3 eggs
  • 1 tsp salt
  • 1/4 tsp pepper

Cook broccoli, using 1/2 teaspoon salt to 1 cup water, about 5 minuts, or until almost tender. Drain. Mix broccoli, onion, green pepper, and cheese. Beat remaining ingredients until smooth (15 seconds in blender on high speed or 1 minute with hand beater). Pour into greased pie plate.

Bake until golden brown and knife inserted halfway between center and edge come out clean, 35 to 40 minutes in 400°.

Note: 1 (10 ounce) package broccoli or cauliflower thawed and drained may be substituted. Do not cook.
