Sweet Potato Casserole

  • 3 cups mashed sweet potatoes
  • 1 cup white sugar
  • 1/2 cup margarine
  • 1 tsp vanilla
  • 2 eggs, well beaten
  • 1/3 cup milk

Combine potatoes, sugar, butter, eggs, and milk. Add vanilla; mix well. Spoon in a 2 quart casserole.

Cover with topping. Bake at 350° for 25 minutes.

Topping:
  • 1/2 cup brown sugar, packed
  • 1/4 cup all-purpose flour
  • 2 1/2 tsp. margarine
  • 1/2 cup chopped pecans

Combine and mix well. Spread evenly over casserole.
