- 3 eggs, separated
- 6 medium sweet potatoes, grated
- 1/2 cup molasses
- 1/4 cup melted butter
- Grated rind of 1 orange
- 1/2 cup sugar
- 1 tsp ginger
- 1 tsp nutmeg
- 1/4 tsp salt
Preheat oven to 350°. Grease a 2 quart casserole. Beat egg whites until stiff. Combine remaining ingredients until well blended. Fold in egg whites. Pour into casserole and bake 20 to 30 minutes.
Makes 6 to 8 servings.
