Good for Left Mashed Potatoes
- Mashed potatoes
- Onions, chopped
- Salt
- Pepper
- 1 or 2 eggs
- 6 – 8 crackers (saltine), crumbled
- 1/2 cup shortening (may need more)
Mix together all, except shortening. Form into patties. Melt shortening in skillet. Get real hot before placing patties in grease. Brown on one side. Turn over. Brown other side and serve.
