Mexican Casserole

  • 1 1/2 lb bacon, fried then crumbled
  • 1 Tbsp flour
  • 2 cups tomatoes
  • 1/4 lb cheese, grated
  • 1 tsp chili powder
  • 2 1/2 cup hominy
  • 1 onion, chopped
  • Salt to taste
  • Pepper to taste

Fry bacon; drain. Add flour, tomatoes, and seasonings. Brown hominy and onions in bacon grease; add to bacon mixture. Place in greased 2 quart casserole dish; sprinkle with cheese.

Bake in 350° oven for 30 minutes.

Serves 6 people
