Easy Mexican Casserole

  • 1 can cream of mushroom soup
  • 1 can tomato soup
  • 1 can Cheddar cheese soup
  • 1 can Ro-Tel° tomatoes
  • 1 1/2 lb ground beef
  • 1 small onion, chopped
  • 1 package Doritos° corn chips
  • 1/2 lb grated cheese
  • 1/2 bell pepper
  • 1 tsp chili powder

Mix soups and Ro-Tel° tomatoes in saucepan and heat over low flame. In skillet, brown ground beef, onion, bell pepper, salt, pepper, and chili powder. When done, add to soup mixture. In a large casserole dish, place a layer of Doritos°, a layer of meat mixture and cover with grated cheese. Repeat again covering with cheese.

Cover with foil and let set 5 to 10 minutes so hot mixture will melt cheese.
