Crispy Chicken Supreme

  • 4 cup Rice Krispies cereal, crushed to 2 cups
  • 1 tsp paprika
  • 1 eg
  • 3/4 cup milk
  • 3/4 cup all-purpose flour
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp poultry seasoning
  • 3 lb frying chicken, washed and patted dry
  • 3 Tbsp margarine, melted

Place crushed cereal in shallow dish or pan. Stir in paprika. Set aside. In second shallow dish or pan, beat egg and milk slightly. Add flour, salt, pepper, and poultry seasoning. Mix until smooth. Dip chicken in batter. Coat with crushed cereal. Place in single layer, skin side up, in well greased or foil lined shallow baking pan. Drizzle with melted margarine. Bake at 350° about 1 hour, or until chicken is tender.

Do not cover pan or turn chicken while baking.

Yield: 6 servings.
