Green Pepper Steak

  • 1 lb beef chuck or round
  • 1/4 cup soy sauce
  • 1 clove garlic
  • 1/2 tsp ginger
  • 1/4 cup salad oil
  • 1 cup green onion, thinly sliced
  • 1 cup green peppers, cut into 1 inch square
  • 1 Tbsp cornstarch
  • 1 cup water
  • 2 tomatoes, cut into wedges

Cut meat across grain into thin strips about 1/8 inch thick. Combine soy sauce, garlic, and ginger. Add beef. Toss and set aside. Heat oil in large frying pan. Add beef and toss until brown. Taste meat – if not tender, cover and simmer until tender. Mix cornstarch with water. Add to pan; cook until thickened. Add tomatoes and heat through.
