Spanish Rice

  • 1 cup uncooked rice
  • 4 Tbsp bacon fat
  • 1 Tbsp green chili peppers, chopped
  • 1 onion, chopped
  • 1 small clove garlic, chopped
  • 1 tsp salt
  • 1 Tbsp chili powder
  • 1 cup tomatoes
  • 1 lb raw hamburger meat
  • 1 1/2 cup water

Heat half the oil in frying pan; add rice and fry to a light brown, stirring occasionally to prevent burning. Remove rice; add remaining fat, then fry the hamburger, onion, garlic, and chili peppers about 10 minutes; add salt, tomatoes and chili powder which has been dissolved in one-fourth cup cold water. Allow the mixture to cook a few minutes, then mix with the rice. Pour into a baking dish; add water and bake until rice is tender, about 45 minutes, in a moderate oven (350° to 375°).

Serves eight.
