Baptist Pie

Audrey Simpson, D.H.S.

  • 1 cup sugar
  • 1/2 cup tart jelly (blueberry or plum)
  • 1/2 cup butter, melted
  • 2 eggs, beaten
  • 2 Tbsp flour
  • 6 Tbsp water
  • 1 tsp vanilla

Mix sugar, flour, water, vanilla, and butter. Add beaten eggs and jelly; mix well. Pour into one large 9 inch unbaked pie shell. Bake in moderate oven until filling is set and the crust is brown.
