Coconut Pie

  • 1 large can Pet® milk
  • 2 cups sugar
  • 6 eggs
  • 1 Tbsp all-purpose flour
  • 1 tsp vanilla
  • 1 large can coconut

Mix flour with sugar. Mix 2 eggs and 4 yolks together (leave 4 egg whites for top). Heat milk in double boiler. Add the rest of ingredients. Cook until thick. Mix in 1/2 of the coconut (leave the rest for the top). Pour ingredients into baked pie shell. Add meringue to top. Sprinkle with coconut. Brown slightly.

Makes two pies.
