Yeast Rolls

Audrey Simpson, D.H.S.

  • 3 cups sifted plain flour
  • 1/2 tsp salt
  • 3 Tbsp sugar
  • 1 package yeast
  • 1 cup warm water
  • 1/2 cup shortening

Sift flour and salt together. Dissolve sugar and yeast in warm water. Work shortening and the liquid into the flour. Turn the dough into a lightly greased bowl. Let rise until double.

Turn out on board and knead a few rounds. Roll out and cut into rolls. Fold over. Butter center and tops. Let rise again.

Bake at 400° – 450°. Do not overbake. These rolls can be warmed over for another meal.
