Catfish – Cheese Biscuit Rolls

  • 2 cups flaked catfish
  • 1/4 cup chopped celery
  • 1/4 cup chopped onion
  • 2 Tbsp chopped green pepper
  • 1/4 cup melted fat or oil
  • 2 Tbsp flour
  • 3/4 cup grated cheese
  • 1 Tbsp chopped parsley
  • 1/2 tsp Worcestershire® sauce
  • 1/4 tsp salt
  • 1/4 white pepper
  • 2 cup biscuit mix

Cook celery, onion and green pepper in fat until tender. Blend in flour. Add milk gradually and cook until thick, stirring constantly. Add cheese and heat until cheese melts. Add seasonings and flaked fish, stirring until blended. Cool.

Prepare biscuit mix as directed. Roll into a rectangle about 12 x 8 x 1/3 inch. Spread with fish mixture. Roll like a jelly roll and seal ends and edges. Place on a cookie sheet.

Bake on 400° for 20 minutes.
