Mexican Corn Bread

  • 1 cup corn meal
  • 1 cup sweet meal
  • 1/2 tsp soda
  • 3/4 tsp salt
  • 1 cup cream style corn
  • 2 eggs
  • 1 lb hamburger meat
  • 1 large onion
  • 3 jalapenos or to taste
  • 1/2 lb Cheddar cheese

Combine first 6 ingredients and set aside. Brown hamburger and drain off fat. Add onions and peppers. In a heavy iron skillet, pour half of corn meal mixture. Top with ground beef mixture. Sprinkle half of cheese over this. Add rest of corn meal. Top with rest meat and cheese.

Cook in q 400° oven till firm.
