- 1 cup flour
- 1 cup corn meal
- 1/3 cup sugar
- 4 tsp baking powder
- 1/2 tsp salt
- 1 1/4 cup milk
- 1/3 cup melted shortening or salad oil
- 1 egg
Heat oven to 400°. Thoroughly grease an 8 inch square pan. Combine flour, corn meal, sugar, baking powder, and salt in a bowl. Stir with a fork to blend. In a separate bowl, beat together milk, shortening and egg. Add liquid ingredients to blended dry ingredients, stirring just until moistened. Pour into baking pan.
Bake 20 – 25 minutes, until golden brown.
Serve hot.
Makes 6 servings.
