  • 2 cups Yellow Cornmeal
  • 1 cup all purpose Flour
  • 2 teaspoons salt
  • 1 teaspoon Baking soda
  • 2 tablespoons Baking Powder
  • 2 cups Buttermilk
  • 1 cup whole Milk
  • 2 eggs
  • 1/4 cup Vegetable Shortening, melted
  • 1 tablespoon Bacon Grease, melted

Mix the dry ingredients together well with a whisk. Mix the liquid ingredients together and pour into the dry ingredients. Stir to incorporate but do not overmix. Pour into a Preheated iron skillet with a bit of the shortening and bacon grease in the pan and bake in a 425 to 450 degree F oven for 20 to 30 minutes.
