Corn Cake

Helen Matthews, Linville High School

  • 3/4 cup plain meal
  • 1 cup flour
  • 1/3 cup sugar
  • 3/4 tsp salt
  • 3 tsp baking powder
  • 1 egg, well beaten
  • 1 cup milk
  • 2 Tbsp bacon drippings of fat, melted

Mix and sift dry ingredients. Add milk, egg, and fat. Bake in shallow buttered pan for 20 minutes at 425°.
