Delicate Sponge Cake

  • 6 eggs (room temperature)
  • 1 cup sugar
  • 1 tsp grated lemon or orange rind
  • 1 Tbsp. lemon juice
  • 1 cup sifted cake flour
  • 3/4 tsp salt

Preheat oven to 325°F. Lightly grease and flour only the bottom of a 10 inch tube pan. Break the eggs into large bowl of electric mixer. Add lemon juice and grated rind. Beat at highest speed until soft peaks form (12 to 16 minutes). Sift flour and salt together while eggs beat. Continue beating eggs at highest speed. Add sugar in a fine stream for about 2 minutes. Change to lowest speed and sift flour/salt into mixture slowly.
