Sweet Potato Cake

  • 3 cup all-purpose flour
  • 2 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp soda
  • 2 tsp cinnamon
  • 1 cup vegetable oil
  • 1 (15 oz) can crushed pineapple (undrained)
  • 2 tsp vanilla extract
  • 3 eggs
  • 2 cup grated raw sweet potatoes
  • 1 cup chopped pecans

Combine dry ingredients. Add oil and pineapple and vanilla. Mix until well blended. Add eggs, one at a time, beating well after each addition. Stir in sweet potatoes and pecans. Pour into tube pan.

Bake at 350° for one hour and 15 minutes.

Yield: 1 (10 inch) cake.
