- 2 eggs
- Juice and grated rind of 1 orange
- Juice and grated rind of 1 lemon
- 3/4 cup sugar
- 1 cup heavy cream
- 1 sponge cake layer, split
Cook first 4 ingredients in top of double boiler until smooth and thickened. Cool. Whip cream. Fold into custard. Spread on cake layer, stack layer. Cover sides and top with custard. Insert long toothpicks to keep layer from sliding.
Refrigerate for several hours before serving.
