Zucchini Cake

Nina Henson, Linville High School

  • 1 1/2 cup flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp each baking soda, nutmeg and cloves
  • 1/4 tsp salt
  • 1 1/4 cup brown sugar
  • 3/4 cup oil
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cup shredded zucchini

Combine flour, baking powder, cinnamon, soda, nutmeg, cloves, and salt; set aside. Beat sugar, oil, eggs, vanilla, and zucchini until sugar dissolves. Stir in flour mixture until blended. Turn into greased and floured 10 inch tube pan. Cook for 45 minutes in 350° oven.
