Election Cake

  • 1 orange (thin outer rind of one orange)
  • 1 cup walnuts
  • 2 eggs
  • 1/2 cup sour cream
  • 1/2 cup brandy
  • 1/2 cup shortening
  • 1 cup sugar
  • 1 cup raisins
  • 2 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • Juice from orange
  • 1/3 cup sugar

Preheat oven to 350°F (180°C.). Grease and flour a 9×13 inch (23×33 centimeters) cake pan. Squeeze orange and set juice aside for topping. Assemble blender. Blender chop nuts. Place in large mixer bowl. Put eggs, cream, brandy, butter, and sugar into blender container. Cover and process at blend until smooth and well blended until raisins are finely chopped.

Assemble mixer. Put flour, baking soda and salt into large mixer bowl with nuts. Add raisin mixture and mix at number 5 until well mixed. Pour into prepared cake pan and bake 30 – 35 minutes. While cake is baking, mix topping ingredients. As soon as cake is removed from oven, poke holes thoroughly.
