- 1 package yellow cake mix
- 1 package instant vanilla pudding
- 1/2 cup plus 2 Tbsp rum
- 1/3 cup oil
- 4 eggs
- 1 (8 oz) crushed pineapple, well drained
- 1 1/4 cup cream of coconut
Combine cake mix and pudding, 1/2 cup cream of coconut, 1/2 cup rum, oil, and eggs. Beat. Pour into tube pan.
Bake at 350° for 50 -55 minutes.
Combine rest of cream of coconut with 2 tablespoons rum. Pour over hot cake which has been inserted onto cake plate. Poke holes and slowly drizzle over top of cake.
