- 1/4 cup flour
- 2 Tsp cornstarch
- Dash of salt
- 2 Thsp cooking oil
- 1 egg white
- 1 Tbsp water
In mixing bowl, stir together flour, sugar, cornstarch, and salt. Add cooking oil and egg white; stir till smooth. Add the water; mix well. Make one cookie at a time by pouring 1 tablespoon of the batter on lightly greased skillet or griddle. Spread into a 2 1/2 inch circle. Cook over low heat about 4 minutes, or till lightly browned. Turn cookie with wide spatula; cook for 1 minute more. Working quickly, place cookie on pot holder. Put paper strip* with fortune in center (fold paper if necessary); fold cookie in half and then fold again over edge of bowl. Place in muffin pan to cool. Repeat with remaining batter.
Makes 8 cookies.
