SMOKED PORK LOIN, INDOORS & EASY

  • 2-1/2 to 3 pound PORK LOIN
  • 2 teaspoons SALT
  • FRESH GROUND PEPPER
  • 1 teaspoon GARLIC POWDER
  • 1 teaspoon ONION POWDER
  • 1 teaspoon SMOKED PAPRIKA
  • 2 teaspoons BROWN SUGAR
  • 1 tablespoon LIQUID HICKORY SMOKE
  • CANERON’S WOOD CHIPS (Any flavor you like. You can find them on Amazon)

Place enough wood chips to cover the bottom of a disposable foil chafing pan. Put a metal rack or some aluminum foil in a ring to hold the meat above the wood chips. Rub the loin with the mixture of salt, pepper, garlic powder, onion powder, paprika and brown sugar. Pour the liquid smoke on it as well. Put the loin on the rack in the pan and cover with a disposable lid that fits the pan or some aluminum foil tightly so the smoke will not escape. Place on a medium low stove top for 20 minutes for the wood chips to get hot and smoke the meat. Then slide the covered dish into a 350 degree F / 176 degree C oven for 45 minutes to 1 hour or an internal temp of the loin to be 145 degrees F / 62 degrees C. Let the loin rest for at least 20 minutes then slice and enjoy.
