Peanut Brittle

  • 1 1/2 cup sugar
  • 1/2 cup Karo syrup
  • Pinch of salt
  • 1/2 cup water
  • 1 pint jar peanuts
  • 1 tsp soda

Put all ingredients, except soda, in boiler on a high fire. Boil until it becomes a light amber color and the peanuts start to popping. Take off fire and add 1 teaspoon soda and stir it up real well. Pour it our on a large buttered cookie sheet , spreading with the spoon as you pour. Let it cool just enough to run a spatula under it and turn over. If it cools too much, it will stick to pan. Wait a few minutes and break it into pieces and put in a bowl.
