Spiced Pecans

  • 1 cup sugar
  • 1/3 cup whipping cream
  • 1/2 tsp salt
  • Dash of cinnamon
  • 2 tsp orange juice
  • 1 tsp grated orange rind
  • 1 1/2 cup pecan pieces

Combine first 4 ingredients in a large saucepan; stir well. Place over medium high heat, stirring constantly, and cook to soft ball stage (236°). Stir in juice and rind. Remove from heat. Add pecans and stir until coated. Spread pecans on waxed paper and immediately separate into clusters with a spoon. Let cool.

Yields: About 2 dozen.
