IRISH SODA BREAD RECIPE
- 4 cups ALL PURPOSE FLOUR
- 1 teaspoon BREAD (BAKING) SODA
- 1 teaspoon SALT
- 2 tablespoons IRISH BUTTER (Kerrygold)
- 1 EGG
- 1-3/4 cups BUTTERMILK
- 1/8 cup HONEY
In a large bowl mix all the dry ingredients and set aside. In a separate bowl mix the BUTTERMILK, EGG and HONEY and pour into the dry ingredients. With your hand or a spoon mix the dough together in a circular motion just until it comes together. Pour out onto a floured surface and tidy the dough up into a circle and flip it. Tuck it into a nice round. Place it onto a floured baking sheet.
Ask a blessing upon your bread as you cut a cross about 3/4″ deep in the name of THE FATHER, THE SON AND THE HOLY GHOST to make your bread come out lovely. Pierce the 4 corners of the bread to release the fairies and stop them from ruining your bread with their mischief.
Place in the oven at 425 degrees F / 210 degrees C for 15 minutes. Then turn the oven down to 400 degrees F / 200 degrees C for 30 minutes. Let cool completely on a rack to allow the bottom to form a crust.
