Mayonnaise

  • 3 eggs
  • 1 1/2 tsp salt
  • 1/3 tsp dry mustard
  • Pinch of red pepper
  • 1 1/2 tsp sugar
  • 2 oz vinegar
  • 1 quart oil

Put first six ingredients in bowl and beat. Put one half of oil in very slow in a steady stream. Add vinegar. Add rest of oil. Beat 15 – 20 seconds after oil has been added.

Yields 1 1/2 quarts.
