Microwave Divinity

  • 2 1/4 cups sugar
  • 1/2 cup water
  • 1/2 cup light corn syrup
  • 1/4 tsp salt
  • 2 egg whites
  • 1 1/2 tsp vanilla
  • 1/2 cup chopped nuts

Mix together sugar, water, corn syrup, and salt in a 2 quart casserole. Loosely cover with plastic wrap. Microwave on HIGH for 6 minutes, or until boiling. Uncover. Microwave on HIGH for 10 minutes, or until hard ball stage is reached.

Beat egg whites until stiff. Slowly pour hot syrup over egg whites while beating. Add vanilla and continue to beat for 5 minutes. Fold in nuts. Drop quickly onto waxed paper.
