Tomato Relish

Carolyn Doster, Spearsville HS

  • 8 ripe tomatoes, chopped
  • 4 cups chopped bell pepper
  • 3 cup chopped onions
  • hot pepper to desired hotness
  • 1 1/2 Tbsp salt
  • 1 1/2 cup sugar
  • 1 cup vinegar

Cook until thick, about 50 minutes. Can in hot sterilized jars and seal.
