- 1 pie shell
- 3/4 lb sausage, browned and drained
- 1 box frozen spinach, squeeze out water
- 1 small onion, diced
- 1 green pepper, chopped
- 1 tsp salt
- 1 tsp pepper
- 1 tsp curry powder
- 1 can mushrooms
- 12 oz Cheddar cheese
- 5 eggs
- 1 can evaporated milk
Bake pie shell. Layer sausage and spinach; sprinkle top with onion, pepper and mushrooms. Cover with shredded cheese, saving some cheese for the top. In blender, add eggs, milk and seasonings. Whip this for 1 minute and pour over ingredients in pie shell. Put last of cheese on top.
Cook 18 minutes in microwave or 1 1/2 hours in 350° oven.
