Squash Casserole

Mattye Guice, RBE

  • 1 quart yellow squash (6 or 8 medium)
  • 1 medium onion, sliced
  • 1 stick oleo
  • 1/4 bell pepper
  • 1 cup grated cheese
  • Salt and pepper to taste

Cook and mash.

  • 2 Tbsp sugar
  • 1 cup cracker crumbs
  • 1/2 cup sweet milk

Cook preceding together until tender; mash and beat well. Combine sugar and cracker crumbs. Save some crumbs for topping. Dot with butter.

Bake slowly 30 minutes.
